Broiled Honey Miso Salmon

Ingredients

  • 2 pounds Scottish salmon, skin removed and cut into 4 equal-sized fillets

  • 1/4 cup raw honey

  • 1/4 cup avocado oil

  • 2 tbsp tamari

  • 1 tbsp rice vinegar

  • 1 tbsp red miso


Method

  1. In a large bowl, combine the honey, oil, tamari, vinegar, and miso. Whisk until silky and smooth. Add the prepared salmon fillets and toss to coat them in the marinade. Place the fish in the refrigerator to marinate for at least 30 minutes but up to 2 hours.

  2. Line a sheet tray with foil and/or parchment, and arrange the fillets side by side. Turn on your oven’s broiler, move a rack to the top of the oven, and allow it to heat up.

  3. Place the salmon in the oven to broil for 3 minutes. Then remove it and brush the tops with the remaining marinade. Place it back in the oven to broil for another 5 minutes.

  4. Remove it once more, brush again, and broil for an additional 1-3 minutes, depending on how cooked you prefer your fish. Medium-rare will be 120°F, medium 125°F, and medium-well 130°F.

  5. Remove the fish from the oven, season with a bit of black pepper, and serve. I served it simply with buttered farro and garlic green beans. Enjoy!
