Chocolate Muffins
Ingredients
- 1 1/2 cups flour 
- 1/2 cup sugar 
- 1/2 cup unsweetened cocoa powder 
- 3/4 tsp baking powder 
- 1/2 Tsp Baking soda 
- 1/2 tsp salt 
- 1/2 cup milk, of choice 
- 1/4 cup unsalted butter 
- 2 eggs 
- 1/2 tsp vanilla paste 
Method
- Preheat your oven to 350°F and line a muffin tin with parchment liners. 
- In the bowl of a stand mixture add the eggs, vanilla, almond milk, and melted butter. Mix until combined and set aside. 
- Sift together the flour, sugar, baking powder soda, salt, and cocoa powder in a large bowl. 
- Add the dry ingredients to the wet mixture and combine using the paddle attachment. Only mix until combined to prevent overmixing. 
- Fill the muffins up to the top of the liners and place them in the preheated oven to bake for 15-20 minutes. 
- Remove muffins from oven and let cool for 5 minutes then serve warm and Enjoy!
