Crispy Potato Wedges
Ingredients
- 3 lb yukon gold potatoes 
- 1/2 cup avocado or olive oil 
- 1 tbsp kosher salt 
- 3/4 tsp black pepper 
- 1/2 tsp paprika 
- 3/4 tsp dried oregano 
- 4 garlic cloves, minced 
Method
- Preheat the oven to 375°F and line a large baking sheet with foil, parchment paper, or both. 
- Wash and scrub the potatoes to remove any dirt, then set them aside to dry completely. 
- Slice the potatoes in half lengthwise, then slice each half into smaller pieces, and place them in a large bowl. 
- Pour the olive oil over the potatoes in the bowl, then add the salt, pepper, paprika, oregano, and minced garlic. 
- Toss the potatoes in the bowl until they are evenly coated with olive oil and seasonings. 
- Spread the potatoes out evenly on the prepared baking sheet. 
- Place the baking sheet in the oven and bake for 40 minutes. 
- Turn the oven to broil and bake for an additional 5 minutes to crisp up the potatoes. 
- Remove from the oven, let cool slightly, and serve. Enjoy!
