Crispy Potatoes w/ Spiced Greek Yogurt
Ingredients
Potatoes:
- 15 yukon gold potatoes 
- 3 tbsp kosher salt 
- 1 tsp black pepper 
- 2 tsp dried thyme 
- 1 tsp sweet paprika 
Yogurt Sauce:
- 1/4 cup olive oil 
- 1 1/2 plain greek yogurt 
- 2 tbsp fresh parsley 
- 3 tbsp lemon juice 
- 1/4 tsp garlic powder 
- 1/2 tsp dried thyme 
- 1/8 tsp sweet paprika 
- 3/4 tsp kosher salt 
- 1/8 tsp black pepper 
Method
- Fill a large pot with water, add two tablespoons of salt, and add the potatoes. Bring to a boil over medium-high heat and cook until a fork easily goes through the potatoes, about 30-45 minutes. 
- While the potatoes are boiling, prepare the yogurt sauce. In a bowl, combine all the ingredients for the yogurt sauce and mix until creamy. 
- In a separate small bowl, combine the dry spices (salt, pepper, thyme, and paprika) for the potatoes. Stir until well mixed. 
- Preheat your oven to broil. Once the potatoes are done boiling, drain them, cut them in half, and place them on a sheet tray. Use a potato masher or fork to smash the potatoes into little disks. Sprinkle the dry spice mix over the smashed potatoes. Broil for 8-10 minutes, or until crispy. 
- Remove the potatoes from the oven and let them cool slightly before serving with the creamy Greek yogurt sauce.

Notes- I think that this recipe is great because I for one get tired of potatoes quickly and this gives me a new way to add them to my table.
