Lemon Arugula Salad
Ingredients
- 4 heaping handfuls of arugula 
- juice of 1 large lemon 
- 1 tsp kosher salt 
- 1/4 tsp freshly cracked black pepper 
- 3 tbsp white wine vinegar 
- 1/3 cup grated parmesan 
Method
- Wash the arugula until it's clean and lay it out to dry for 4 hours in a room-temperature space. 
- Place the lettuce into a large salad bowl and refrigerate while making the dressing. 
- In a separate bowl, mix together the lemon juice, white wine vinegar, salt, and pepper. Whisk until well combined. 
- Remove the lettuce from the fridge and pour the dressing over it. Gently toss until all the lettuce is coated. Add in the Parmesan and toss softly. 
- Serve and enjoy right away!

- Keeping it quick with this recipe. It’s a great summer salad that takes minimal ingredients and is super simple to make!
