Maple Sweet Potatoes
Ingredients
- 4 large sweet potatoes 
- 5 tbsp salted butter (good quality like Kerrygold or Vital Farms) 
- 3 tbsp maple syrup (make sure it is real syrup, not anything fake) 
- 1 tsp salt + 2 tbsp 
Method
- Fill a large pot with water and add in the 2 tablespoons of salt. Set aside. 
- Wash, peel, and cube the potatoes into pieces that are very close in size to help with even cooking. Dump the prepped potatoes in the salt water and place on medium-high heat. Bring the water to a simmer and once simmering reduce the heat to medium-medium-low to keep a steady soft simmer. Simmer for 25-35 minutes or until very soft. 
- Drain the potatoes into a colander and allow them to sit and release steam for 8-10 minutes. 
- After the potatoes have cooled just slightly add them to a serving bowl and mash until very smooth and creamy. Fold in the butter, maple syrup, and remaining 1 teaspoon of salt until fully combined and silky. 
- Taste and add any more salt or syrup to taste before serving and enjoying! 
Notes
- You can use a stand mixture or a hand mixer to mash, whatever works best for you. 
- Allowing the steam to release from the cooked potatoes helps to prevent watery and bland mashed potatoes we don’t want any extra water in them to maximize the flavor.
