Orange Ricotta Cake
Ingredients
- 2 cups unbleached all-purpose flour 
- 1/2 cup cane sugar 
- 3/4 tsp baking powder 
- 3/4 tsp baking soda 
- 1/2 tsp salt 
- 2 eggs 
- 1/2 cup whole milk 
- 1/2 cup whole milk ricotta cheese 
- 3/4 tsp vanilla 
- 1 tbsp orange zest 
- 1/3 cup orange juice 
- 1/2 cup unsalted butter 
Method
- Preheat your oven to 350°F and grease a cake pan with cold butter. 
- In a large bowl, sift together the flour, salt, baking powder, baking soda, and sugar. Set aside. 
- In the bowl of a stand mixer, combine the eggs, milk, orange juice and zest, vanilla, and ricotta. Mix until fully combined. Slowly pour in the melted butter. 
- Gradually add the sifted dry ingredients to the wet ingredients, and mix using the paddle attachment. Mix gently just until everything is incorporated. 
- Pour the batter into the greased pan and tap it on the counter three times to release any air bubbles. 
- Place the cake in the oven on the middle rack and bake for 20-25 minutes, or until a toothpick or cake tester inserted into the center comes out clean. 
- Remove the cake from the oven and set aside to cool for 30 minutes. Once cooled, remove the cake from the pan and spread a thin layer of buttercream and top with candied oranges. 
- Serve and enjoy!
