Stove Top Tomatoes With Dill
Ingredients
- 3 cups cherry tomatoes 
- 1/4 cup extra virgin olive oil 
- 2 tbsp kosher salt 
- 2/3 cup + 4 Tbsp fresh dill, finely chopped 
- 5 large basil leaves, finely chopped 
- 1/2 tsp fresh black pepper 
Method
- Wash and dry the tomatoes, then set them aside. Heat a shallow sauté pan over medium heat and add the olive oil, 2/3 cup of dill, salt, and pepper. 
- Once the oil is hot and the dill becomes fragrant, add the tomatoes. Cover the pan and let them cook over medium-low heat for 8-12 minutes. Once the tomatoes are soft, use the back of a fork to smash about half of the tomatoes to release their juice. Let the tomatoes sit on low heat for another 7 minutes. 
- Remove the pan from heat and top the tomatoes with the remaining tablespoon of dill and the basil. 
- Serve with a fresh loaf of bread and enjoy!
