Pizza Sauce
Ingredients
- 28 oz whole san marzano tomatoes (canned) 
- 1 cup fresh basil (packed cup) 
- 1/4 cup fresh oregano 
- 3 large garlic cloves (peeled) 
- 1/8-1/2 Tsp red chili flakes (use as much or as little as you like) 
- Salt (to taste) 
- Pepper (to taste) 
Method
- In a medium-sized pot, add the tomatoes, basil, oregano, garlic, and chili flakes. 
- Place the pot on medium-low heat and slowly bring it to a simmer. Once simmering, reduce the heat to low and allow to cook covered for 2 hours. This will lead to a deeper flavor. 
- After 2 hours, remove the oregano from the sauce, and using an immersion blender or blender, blend the sauce until smooth. 
- Once blended bring the sauce to a light boil and allow it to reduce for about 30 minutes on medium heat, this will thicken the sauce and allow it to act as a better, less watery sauce. 
- Once reduced season with salt and pepper to taste and allow it to cool completely before using or storing in the fridge.

Notes
- There is so much you can do with a simple tomato sauce, pizza is just one of them. 
- Allowing this sauce to take time will lead to a deeper flavor and will be so worth it.
