Pumpkin Muffins
Ingredients
- 1 1/2 cup unbleached all-purpose flour 
- 3/4 tsp baking soda 
- 3/4 tsp baking powder 
- 3/4 tsp kosher salt 
- 1/2 tsp pumpkin pie spice 
- 1/4 tsp allspice 
- 2 eggs 
- 1/4 cup milk (of choice) 
- 1/2 cup unsalted butter, melted 
- 1/4 tsp vanilla paste 
- 1/2 cup pumpkin purée 
- 1/3 cup cane sugar 
- 1/3 cup light brown sugar 
Method
- Preheat the oven to 350°F and line a muffin tin with parchment liners. 
- Sift together the flour, baking soda, baking powder, pumpkin pie spice, allspice, and salt. 
- In a large bowl, whisk together the almond milk, vanilla, eggs, and pumpkin until well combined. Then, whisk in the melted butter, cane sugar, and brown sugar. 
- Gradually add the dry flour mixture to the wet ingredients, mixing until just combined. 
- Using an ice cream scoop, fill the muffin tin with the batter. Bake for 20-25 minutes or until a toothpick or cake tester comes out clean. 
- Remove from the oven and let the muffins cool. 
- Serve and enjoy!
