Tabbouleh
Ingredients
- 1 cup parsley, finely chopped 
- 2 tbsp fresh mint, finely chopped 
- 1/2 cup red onion, miced 
- 2 garlic cloves, minced 
- 2 tbsp lemon juice 
- 1/2 cup fresh tomatoes, diced 
- 1 1/3 cups dry bulgur wheat 
- 1/3 cup extra virgin olive oil 
- 3/4 tsp kosher salt 
Method
- Start by cooking the wheat according to the instructions on the package. 
- Prepare the parsley, mint, onion, tomato, and garlic. Add all the ingredients to a large bowl. 
- Toss the produce together, then add the EVOO, salt, lemon, and cooked wheat. 
- Mix everything thoroughly and refrigerate for 20 minutes to let the flavors meld. 
- Remove from the fridge, serve, and enjoy! 
Notes- This is a simple dish that is not meant to be over complicated. 
- Allowing the dish to rest is very important for the end flavor results!
