Mint Pistachio Pesto
Ingredients
- 4 cups fresh basil 
- 1/2 cup fresh mint 
- 1/2 cup oven roasted pistachios 
- 1/2 cup olive oil 
- 2 blanched garlic cloves 
- 1/2 tsp chili flakes 
- 2 1/2 tsp kosher salt 
Method
- In the bowl of a food processor, combine the basil, pistachios, mint, salt, pepper, chili flakes, and garlic. Process until smooth. 
- Once smooth, slowly add in the olive oil, blending until fully incorporated. Divide the pesto into jars for refrigeration or freezing. 
- Enjoy it right away or save it for later! :)
